Cinco Jotas Shoulder (Paleta)

Cinco Jotas (5J) is often quoted as the standard-bearer of Spanish gastronomy. Known unashamedly as “the finest jamon in the world”, Cinco Jotas is based in the town of Jabugo, and because of the fame of Cinco Jotas, Jabugo has become a symbol for the very best Jamón Ibérico de Bellota.

What makes 5J hams special?

The long curing process of 5J Jabugo Ham lasts 18-36 months and takes place in the natural cold environment of Sierra de Aracena outside the town of Jabugo. Jabugo’s special microclimate and vast pastures make it the perfect environment to rear pure Iberian pigs and produce perfect pata negra ham. Cinco Jotas has dedicated itself to offering the very best Jamón Ibérico de Bellota, for the ultimate taste and bouquet.

The Cinco Jotas 100% Iberico pig is an indigenous breed exclusive to south-west Spain. Each one has more than two hectares of space to roam from the age of approximately two months to around 18-24 months.  During the period of the ‘montanera’ (when acorns fall from the trees), between October and March, the animals roam about 14km a day to forage for acorns, their main source of food. This is responsible for the meats great texture and sweet taste, while the fat inside the muscle of 100% Ibérico pigs ensures the meat has a strong, distinctive flavour.

The natural curing process takes place in the Jabugo curing cellars over a period of 18 months to three years. The climate gives the best possible combination of temperature and humidity.  All these factors allow Cinco Jotas to guarantee the exquisite taste and exceptionally high quality of its products.

Care Instructions:

A Cinco Jotas 100% iberico paleta on the bone will last approximately 8-12 months if stored at a cool temperature in a dry environment.  After carving the Jamon will last for 8 weeks if cared for correctly. We recommend covering the exposed surface of the ham with a section of the removed fat and then covering the whole Jamon with a clean, dry cloth (the supplied muslin cover is perfect) which will prevent the ham from drying out. Carved slices will last for 3-4 days if stored in the fridge.

We recommend using an authentic ham stand and carving knife to get the most from your Paleta.  Please note a shoulder will produce much less carved ham than a whole leg and this is reflected in the price.
